ZABAIONE / ZABAGLIONE

Custard with Marsala served Hot / Custard with Marsala and Whipped Cream served Cold
Zabaione is the original Custard with Marsala. Zabaglione was later developed which is simply the Zabaione (Custard with Marsala) that has fresh whipped cream folded into it.
Ingredients
5 egg yolks plus 1 whole egg
2 tbsp. sugar
½ cup Marsala
Optional: 1 cup light whipping cream
Fresh berries such as blueberries, blackberries, raspberries, etc.
Combine the 5 egg yolks, 1 whole egg and 2 tablespoons of sugar in the top of a double boiler above simmering water or in a medium-sized heat-proof glass bowl set in a shallow pan of barely simmering water.
Beat the mixture with the egg beater on medium speed, until iti s pale yellow and fluffy.
Then gradually add the Marsala and continue beating until the zabaione becomes thick enough to hold its shape in a spoon. This process may take about 10 minutes.
ZABAIONE: (If you wish to serve as Zabaione (Custard with Marsala), follow this step.
Spoon the zabaione into individual dessert bowls, compote dishes or large stemmed glasses, and serve it while it is still hot.
ZABAGLIOINE: (If you wish to serve as Zabaglione (Custard with Marsala and Whipped Cream), follow these steps:
Allow the custard to cool completely.
Place a stainless steel or glass bowl in the freezer along with the egg beaters for 10 minutes.
Tip: Place these in freezer when you begin preparing the Zabaione.
In the chilled bowl, whip the cream until it forms soft peaks.
Gently fold the custard into the whipped cream.
Spoon the Zabaglione into individual dessert bowls, compote dishes or large stemmed glasses.
Chill the zabaglione in the fridge until ready to serve.
Optional: Serve decorated with berries on top.
