UOVA STRAPAZZATE – Scrambled Eggs with Green and Red Peppers
Ingredients
1 tbsp Butter
1 tbsp extra-virgin olive oil
1 red pepper, chopped
1 green pepper, chopped
8 Eggs
½ tsp salt
Sprinkle Freshly ground Black Pepper
4 tbsp Freshly grated Parmigiano Reggiano Cheese
Wash the peppers under cold running water. Pat dry and cut in ½ slices, then dice into small pieces.
Heat oil and butter in a large frying pan and cook the peppers for 3 minutes.
Beat the eggs with the salt and pepper and add to the pan.
Scramble gently until eggs are almost firm, then add the cheese and stir for 30 seconds more.
Serve immediately so the eggs do not overcook.
Serves 4
