TRANCIE DI SALMONE CON VEGETALI – Poached Salmon Steak with Vegetables

Ingredients

4 Salmon steaks of 8 ounces each
1 cup fish or chicken stock (1 Fish or Chicken bouillon dissolved in boiling water)
¼ cup lemon juice
1 onion, sliced thinly
2 carrots, peeled and shredded
1 green pepper, sliced thinly
½ cup white wine
½ tsp salt
pinch of chili pepper (optional)
sprinkle of Freshly ground Black Pepper
1 tbsp butter
1 tbsp extra-virgin olive oil
1 tbsp flour
1 tbsp flat-type Italian parsley, chopped

Slice the onion and pepper thinly. Shred the carrot.

Place salmon steaks in a large enough pan that steaks will fit in one layer.

Add fish or chicken stock, lemon juice, onion, carrots, green pepper, white wine, optional chili pepper, salt and black pepper.

Cook gently over medium heat for 10 minutes or until centers come out of the steaks easily.

Transfer the steaks to a heated platter, cover with foil (tented) and keep warm.

Bring sauce to a boil. Mix butter, oil and flour together and whisk into the sauce. Cook sauce, stirring until the sauce thickens, about 3 minutes.

Pour sauce over fish, sprinkle with chopped parsley and serve.

Serves 6
