TIRAMISU DI FRAGOLA – Raspberry Tiramisu
Tiramisu di Fragola is a delicious variation of the traditional Tiramisu (which means “Pick Me Up”). This dessert should be made one day ahead of serving. This works well when you are planning to top a special dinner with a delicious dessert.
Ingredients
2 package (10 oz) frozen unsweetened raspberries
1 pound Mascarpone cheese, at room temperature
¼ cup granulated sugar
6 tbsp Cognac (or Brandy)
1 tablespoon lemon juice
1 tsp pure vanilla extract
1 cup light whipping cream
48 (2 packages) soft ladyfingers; halved (preferably the Italian Soviardi Cookies)
½ cup fresh raspberries
In a colander set over bowl, place the raspberries to thaw, allowing the juice to drip to the bowl below. Reserve the juice. Set aside.
In a large bowl, beat the mascarpone cheese until soft.
Stir in brandy and the lemon juice.
In another bowl, with an electric mixer, beat the cream, granulated sugar and vanilla until soft peaks form.
Stir a fourth of the whipped cream into the mascarpone mixture to lighten, using a rubber spatula. Fold the remaining whipped cream into the mascarpone mixture.
Stir into the reserved raspberry juice the remainder of the cognac.
Line the bottom of 13 x 9 x 2 inch glass baking dish; (or other decorative serving dish), with 1/3 of the ladyfinger halves.
Brush with about 3 tablespoons reserved raspberry juice.
Spread with one third of the mascarpone mixture.
Sprinkle with one-third of the thawed raspberries, pressing some against glass to
show through.
Repeat layering with the remaining ladyfingers, raspberry juice, the mascarpone mixture, and raspberries twice.
Garnish the top layer with fresh raspberries. Cover lightly and refrigerate for a minimum of 3 hours or overnight.
Serves 8 to 10
Preparation and Cooking Time: 30 minutes
NOTE: This must be made a minimum of 3 hours or overnight before you plan to serve.
