POLLO ALLA GREGLIA CON OREGANO – Grilled Chicken with Oregano
Ingredients
8 chicken pieces
2 tablespoons extra-virgin olive oil
½ tsp salt
Freshly ground Black pepper
1 tbsp. lemon juice
1 garlic clove, finely chopped
1 tbsp flat-type Italian parsley, chopped
2 tsp Oregano
Preheat broiler and place rack 6 inches beneath it.
Wash chicken and pat dry.
In a large bowl, whisk together the oil, salt, black pepper, garlic, parsley, oregano and lemon juice. Add chicken pieces and coat thoroughly with the mixture.
Place on broiler pan and cook under broiler for 15 to 20 minutes on each side, basting occasionally with the juices.
When the chicken is browned and tender, transfer to a heated platter.
Serve with the pan juices poured over.
