PISELLI AL PROSCIUTTO – Braised Peas with Prosciutto
Ingredients
2 tbsp. extra virgin olive oil
¼ cup finely chopped onions
2 cups frozen peas, rinsed and drained
2 ounces prosciutto, cut in 1 by ¼ inch julienne strips (approx ¼ cup)
salt
freshly ground black pepper
In a heavy 1 to 2 quart saucepan, heat the oil over medium heat. Add the chopped onions and saute for 2 to 3 minutes.
Rinse the peas with warm water in order to help them thaw out.
Add the peas and cook uncovered, stirring frequently for about 7 to 10 minutes.
Then add the prosciutto, heat through and serve.
Serves 6
