PETTO DI POLLO AI FERRI – Grilled Chicken Breast
Ingredients
4 chicken breasts
2 tablespoons extra-virgin olive oil
sprinkle of italian seasonings
salt
fresh ground pepper
1 tbsp. lemon juice
Slice each chicken breasts in 3 thin slices, about ½ inch thick.
In a bowl, mix olive oil, italian seasonings and lemon juice. Add chicken breast and coat with the mixture.
Cook the chicken on a stove top grill, griddle or even a non-stick pan for approximately 5 minutes on each side.
Do not use any fat or oil to grease the pan. The chicken breast is very lean and the smoke will be minimal.
Transfer the grilled chicken breasts to a heated baking dish or platter. Cover with foil until all the pieces are cooked.
Season with salt and freshly ground pepper, top with a drizzle of olive oil, and a squeeze of lemon. Serve warm accompanied by steamed asparagus or a simple green salad.
