PESCO AL CARTOCCIO – Fish Cooked in a Foil
Ingredients
6 (6 to 8 ounce) salmon fillets (skins removed) or trout, sea bass or haddock
¼ cup lemon juice
1 tbsp butter, softened
1 tbsp extra-virgin olive oil
3 tsp fresh flat-type Italian parsley, chopped
½ tsp salt
Freshly ground black pepper
In a small bowl, whisk together the lemon juice, softened butter, oil, and chopped parsley.
Cut 6 square pieces of foil. Place one fish fillet on each piece of foil.
Sprinkle lightly with salt and black pepper. Add 1/6 of the lemon juice mixture over top.
Fold the foil around the fish and seal the edges tightly.
Place on barbeque grill for 20 minutes.
In the oven, place the cartocci (fish in foil) on a cookie sheet and put on lower rack in preheated oven to 375 º F. for 20 minutes.
Place each cartoccio on individual plates and open slightly allowing some of the steam to escape.
This is a very impressive dish.
