MOCHA SEMIFREDDO – Semifrozen Mocha Dessert
Semifreddo is a very impressive dessert which could be made up to 3 days ahead of serving. This works well when you are planning to top a special dinner with a delicious dessert.
Ingredients
Nonstick Cooking Spray
¼ pound Amaretti Cookies (about 20 small cookies) (store bought or made from Amaretti Dolci recipe in this book)
3 tbsp unsalted butter, melted
¾ cup sugar
5 egg yolks
½ cup espresso coffee
2 tbsp Cognac (or Brandy)
pinch of salt
1 cup light cream
Spray a 10 x 6 x 3 inch loaf pan lightly with nonstick spray. Line the pan with plastic wrap, leaving excess to hang over the ends and sides.
Finely grind the cookies in a food processor (or blender). Add the melted butter and process until the crumbs are completely moistened.
Press the crumb mixture onto the bottom of the prepared loaf pan.
Refrigerate.
Make a small pot of espresso coffee with a traditional espresso maker or you could use instant espresso to make ½ cup (4 ounces). Let it cool.
Whisk ½ cup of the sugar, the egg yolks, espresso, cognac (or Brandy) and salt in a large metal bowl to blend.
Set the bowl over a saucepan of simmering water. Whisk the egg mixture until it is thick and creamy, about 5 minutes.
Set the custard in the bowl on top of another bowl of ice to cool completely. While this is cooling, go to the next step.
Using an electric mixer, beat the cream and remaining ¼ cup of sugar in another large bowl until firm peaks form.
Using a large rubber spatula, gently fold the whipped cream into the custard.
Spoon the mixture onto the prepared crust. Fold the overhanging plastic wrap over the custard and freeze until frozen, at least 6 hours or up to 3 days.
Unfold the plastic wrap. Turn the dessert over onto a platter and peel off the plastic wrap. Cut into 1 inch slices and serve.

NOTE: This must be made at least 6 hours before you plan to serve.
