INSALATA VERDE – Green Salad
Ingredients
1 head Romaine Lettuce
2 tbsp extra-virgin olive oil
4 tbsp Balsamic Vinegar
½ tsp salt
Pinch Oregano
Sprinkle Freshly ground Black Pepper
1 Green Pepper, sliced
1 Cucumber, peeled and sliced
Wash and dry romaine leaves and put in refrigerator until ready to use.
Place oil, vinegar, salt, pepper and oregano in a bowl and whisk together until mixture is smooth. (You may add all ingredients into a jar with lid and shake together).
Toss with the lettuce, green pepper and cucumber. Drizzle with the last of the dressing, and serve.
Serves 4
