FUNGHI ALLA GRIGLIA – Grilled Porcini Mushrooms

Ingredients

4 Large Porcini Mushrooms
3 tbsp extra-virgin olive oil
2 garlic cloves, finely chopped
2 tbsp flat-type Italian parsley, chopped
salt
Freshly ground black pepper

Remove the stems from the caps (you may reserve for another purpose).

Mix 2 tablespoons of the olive oil with the garlic, salt and pepper and brush over the mushrooms.

Grill over medium hot coals (or medium-high heat on stop-top grill) until softened and brown, about 5 minutes, then turn to the other side.

Grill for another 5 minutes.

Transfer to a heated platter and sprinkle with oil and chopped parsley.

Let it rest for about 2 minutes and serve.

Serves 4
