FRITTATA CON GAMBERETTI – Omelette with Baby Shrimps
Ingredients
1 tbsp butter
8 oz can Baby shrimps, rinsed and drained
8 Eggs
½ tsp salt
Sprinkle of Freshly ground Black pepper
2 tbsp extra-virgin olive oil
Heat butter in a small pan and cook shrimps gently for 5 minutes.
Beat the eggs with salt and pepper.
Heat the oil in a large frying pan and pour theegg mixture in. Draw the mixture away from the sides of the pan so the omelette cooks quickly.
When the bottom has started to set, put the shrimps on top and continue to cook until the top is set.
While the Frittata is cooking, preheat broiler of the oven.
Place the frying pan under the broiler of the oven for about 2 minutes. (Cover the handle with a piece of foil to protect from the heat).
Serve immediately.
