FAGIOLI CON PROSCIUTTO – Beans with Prosciutto
Ingredients
2 tbsp extra-virgin olive oil
¼ cup onions, chopped
1 tbsp. garlic, finely chopped
1 can diced tomatoes in juice
2 cans cannellini beans (or white kidney beans) rinsed and drained
2 ounces prosciutto, coarsley chopped
salt
Freshly ground black pepper
Chop the onion and garlic.
Heat the oil in a large, heavy skillet over medium heat. Add the chopped onion and cook, stirring about 3 minutes. Add the chopped garlic and stir in well for about 30 seconds.
Stir in the prosciutto and cook for until well heated, about 1 minute.
Add the tomatoes and increase the heat to medium-high and simmer for 10 minutes.
Gently stir in the beans. Simmer until they are heated thoroughly, about 3 minutes.
Season with salt and pepper to taste.
Transfer to a bowl and serve.
