BISTECCA ALLA FIORENTINA – Broiled Marinated Steak
Ingredients
2 tbsp. extra-virgin olive oil
¼ cup wine vinegar (or dry red wine)
2 tbsp. chopped fresh parsley, preferably the flat-leaf Italian type
1 garlic clove, finely chopped (you may use a garlic press)
½ tsp dried oregano
2 T-bone or porterhouse, cut 1 inch thick
salt
Mix together in a small bowl, the extra-virgin olive oil, wine vinegar, chopped parsley, garlic and oregano.
Place the steaks in a shallow baking dish. Brush both sides of the steaks with the marinade mixture. Let the steaks marinate at room temperature for 15 to 20 minutes.
Preheat the broiler to its highest temperature and remove the steaks from the baking dish. Discard the marinade.
Pat the steaks dry with paper towels and broil them 3 inches from the heat for about 4 to 5 minutes on each side, or until they are done to your taste. (Test by pressing with a finger: when it is slightly resilient, neither soft nor firm, the steak is medium rare)
Transfer the steaks to a heated serving platter and season with salt.
To serve, cut the steaks into thick slices. An excellent side dish would be steamed spinach, white kidney beans or cannellini beans and mixed green salad.
