AMARETTI DOLCI – Sweet Almond Macaroons
Ingredients
1 ½ cup blanched Almonds
2 egg whites
¼ tsp. salt
1 ½ cups sugar
¼ tsp pure vanilla extract
¼ tsp almond extract
Put almonds into a blender or food processor and grind into a powder.
Beat egg whites with the salt until fluffy, then beat in sugar, one spoonful at a time, until stiff peaks are formed.
Fold in ground almonds, vanilla and almond extract.
Drop from a teaspoon onto a well sprayed (with non-stick spray) cookie sheet, about 1 inch apart.
Bake in preheated oven at 350º F. for 10 to 15 minutes, or until very lightly browned.
Makes 3 dozen
